Tonia Buxton’s Greek spiced prawns

 

Make your tastebuds zing with this moreish recipe from TV presenter and celebrity chef Tonia Buxton

 

Serves 4

  • 500g spinach
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 300g cherry tomatoes
  • 1 tsp of turmeric
  • 1tsp of ground coriander
  • ½ tsp of chilli flakes (more if you like it hot)
  • 500g raw king prawns
  • Zest & juice of 2 lemons
  • Bunch of coriander leaves chopped

 

 

Heat a large frying pan, add the spinach & toss often until it has just started to wilt. Remove from the frying pan & set aside.

Add the olive oil & on a gentle heat fry off the garlic for about a minute.

Then add the tomatoes and spices and cook for another few minutes.

Increase the heat, add the prawns and lemon zest, season & stir often for a couple of minutes, until the prawns turn pink.

Add the lemon juice spinach & coriander stir through then serve immediately.
